Le vignoble de Fosse Sèche est situé à Vaudelnay au sud de Saumur, à l’extremité du plateau de Brossay. Il est planté sur des sols de pierres de silex et d’oxyde de fer, là où la quasi-totalité du vignoble saumurois s’épanouit sur des sols calcaires.
Cette différence de taille influence grandement la nature des vins produits.
Guillaume et Adrien Pire et leurs compagnes conduisent 15 hectares de vignes en agriculture biologique et biodynamie, tandis que les 35 autres hectares du domaine sont dédiés à la nature et à la biodyversité.
